On Sundays from 11:00 to 14:00, our Greenhouse hosts a vegan buffet brunch several times a month until winter. This event provides an opportunity for you to enjoy a wide variety of vegan dishes, both sweet and savory.
Our menu includes vegan dishes ranging from breakfast classics, like pancakes and Bischer Muesly, to roasted seasonal vegetables, salads, fermented and pickled food, warm dishes, bread spreads. To maintain our commitment to sustainability, we require reservations for our brunch. We aim to make plant-based and fresh food affordable and prevent food waste. Our off-grid venue runs on solar power, and we collect rainwater to do the dishes. We ask our guests to help us conserve water by reusing their plates and drinks. |

The Space

We hope that you'll take the time to explore our venue and learn more about how we function off the grid and the challenges that come with it. We encourage active participation and engagement with the space, which means that you'll have the opportunity to learn about off-grid living while enjoying a delicious meal. And don't forget, since we rely on off-grid resources, we ask our guests to help us conserve water by reusing their plates and drinks. Join us for a one-of-a-kind vegan buffet brunch.

Reservation
|
The Sunday brunch costs € 17,50 per person. Please keep in mind that the later you join, the less variety of food there will be since we don't want to overproduce and waste food.
You can reserve one of the two available time slots of 2,5 hours on Sundays between 11 AM and 3 PM in the form below. Don't worry, we won't chase you away! After 2,5 hours we normally have space to sit in the Kaskantine besides the central greenhouse. Please note that we are a no-cash venue. |

About Our Kitchen: Off-Grid Kitchen
An essential part of learning to cook sustainably is taking into consideration the energy and water, that is required to create meals. Recognizing the environmental impact of our food choices is crucial.
Our kitchen and location are off-grid, meaning we are not connected to electrical, water, or sewer networks. The kitchen is an old shipping container refurbished with second-hand building materials. This gives certain limitations on what we can do.
Energy
Energy is essential for most kitchen activities, such as baking, heating water, and cooling. Heating requires a lot of energy. For example, baking a loaf of bread in an electric oven of 2000 watts for one hour consumes 2 kwh.
De Kaskantine's solar production has a peak capacity of 4000 watts. Additionally, our inverter and battery have their respective maximum capacities.Therefore, it is essential for us to carefully schedule energy usage to coincide with the optimal solar production period.
De Kaskantine is a microcosm of its environment, and just as the world is undergoing an energy transition, so are we. Currently, we use additional gas and wood stoves since we are not yet able to fully cook with the solar panels and battery capacity we have, but we hope to transition towards that. It's also important to note that, because we rely on solar power, our activities are limited during the winter months.
Gray water
We treat the kitchen wastewater with a helophyte filter. This filter can handle a daily maximum amount of 100- 400 water depending on the season, so we have to be very cautious about how we wash dishes and clean the kitchen.
Water
We collect rainwater, and at the moment, we can collect up to 10,000 L. We use it mostly for cleaning and watering. Drinking water, we have to carry it with us to the location. You can help us a lot by bringing your own drinking water.
Composting
We compost all our food scraps and use it for the garden.
