About Our Kitchen: Off-Grid Kitchen

An essential part of learning to cook sustainably is taking into consideration the energy and water, that is required to create meals. Recognizing the environmental impact of our food choices is crucial, and the Cooking Club helps to explore this aspect of cooking.

Our kitchen and location are off-grid, meaning we are not connected to electrical, water, or sewer networks. The kitchen is an old shipping container refurbished with second-hand building materials. This gives certain limitations on what we can do.

Energy
Energy is essential for most kitchen activities, such as baking, heating water, and cooling. Heating requires a lot of energy. For example, baking a loaf of bread in an electric oven of 2000 watts for one hour consumes 2 kwh.
De Kaskantine's solar production has a peak capacity of 4000 watts. Additionally, our inverter and battery have their respective maximum capacities. Therefore, it is essential for us to carefully schedule energy usage to coincide with the optimal solar production period.
De Kaskantine is a microcosm of its environment, and just as the world is undergoing an energy transition, so are we. Currently, we use additional gas and wood stoves since we are not yet able to fully cook with the solar panels and battery capacity we have, but we hope to transition towards that. It's also important to note that, because we rely on solar power, our activities are limited during the winter months.

Gray water
We treat the kitchen wastewater with a helophyte filter. This filter can handle a daily maximum amount of 100- 400 water depending on the season, so we have to be very cautious about how we wash dishes and clean the kitchen.

Water
We collect rainwater, and at the moment, we can collect up to 10,000 L. We use it mostly for cleaning and watering. Drinking water, we have to carry it with us to the location. You can help us a lot by bringing your own drinking water.

Composting
We compost all our food scraps and use it for the garden.

Embracing the Microcosm of the Circular Economy

The Cooking Club shows how the circular economy depends on the microscosms of the household. You'll discover ways to close the loops in your daily life, such as composting, exploring balcony gardening, and adopting energy-saving practices.

Instructors

Picture
The founders of De Kaskantine, Menno and Betty, will lead this course. With the help of volunteers, they have moved and rebuilt the project three times, opened the restaurant twice, and transformed a former football field into a thriving garden, all the while with the aim to build knowledge and expand community-based projects.

While they are firm believers of system change, they understand that empowering individuals and communities with knowledge and skills is crucial in combatting climate change. Climate-based solutions and learning is at the heart of their desire to create a hands-on, practical course for city dwellers to take tangible actions, both personally and in their community.

Along with Betty and Menno, there will also be guest instructors, who are experts in their respective fields and who will also bring their own passion to the class.

FAQs

Who is this Cooking Club for?
This cooking club is specifically for individuals who want to transform their eating and cooking habits to be more climate-friendly but may find it difficult to do so on their own. If you're seeking guidance, inspiration, and a supportive community to help you navigate the challenges of adopting sustainable cooking practices, this club is for you.
Do i need to be a vegan to be in this club?
This course is for vegans and non-vegans alike. During the course, we will be cooking plant-based meals that do not feature animal products, however, we will discussing the Planetary Health Diet, developed by the EAT-Lancet Commission, which does feature a small amount of animal products, should you want to consume them.
What kind of cooking skills and knowledge do I need to have to join the club?
No prior cooking experience is required.
Is there any additional cost involved apart from the monthly membership fee?
No
Would the Club just Cook with organic ingredients?
Our aim for the club is to make climate friendly food accessible to as much people as possible. While we incorporate organic ingredients into our cooking whenever possible, organic produce is more expensive and therefor not affordable for everyone on a budget. Therefore, our primary focus will be on utilizing local, seasonal vegetables, and rescued food. By prioritizing these options, we can reduce our environmental impact and promote accessibility to sustainable cooking practices.
